May Favourites


The Hummingbird Bakery cookbook

I have wanted this cook book for ages, as I follow their cafĂ© on Instagram. The baking always looks amazing and I managed to pick it up for just £5 in Tesco! I’ve already baked the ‘Marshmallow Cupcakes’ and ‘Coconut Dreams’, both were huge hits! Baking enthusiasts will love this book! 





Cute Rabbit pillow

I really like some of the neutral animal inspired home ware at the moment and fell in love with this pillow from Asda, I love the simple sketched rabbits and think it will make a great edition to my sofa.



Rings

I recently popped to Sainsbury’s for a quick look around and as you do when you go to ‘look around’ I came out with a selection of things, one being some gorgeous rings . I really like layering lots of rings, but wanted to match them with my current selection which can be hard. I also have super chubby fingers, so shop bought rings don’t usually fit me,  but these ones from Sainsbury’s fit perfectly and their really pretty!




Marshmallow ‘FLUFF’


If you haven’t tried this incredible substance you really need to. Originating from America, how could it not be? This soft, gooey marshmallow mess is super easy to use and was a great ingredient for baking. Even if you don’t plan to bake with it, spread it on a biscuit, it’s a must try!




High-Waisted bikinis

I really love high waisted bikinis but have never been adventurous enough to get myself one, however, this year I have been overwhelmed by the selection of colours, prints and patterns available at a really affordable price. So I picked up TWO! :)

Croyde Bay weekend & tips

Croyde is one of my favourite areas to holiday in Devon. I recently visited for a short break, surfed, ate ice-cream and got a tad (a lot ) sunburnt. I love to come back here as it is such a relaxing town, everything is within walking distance and the beach and surfer waves are BEA-utiful. It is one of the more expensive areas to stay in, but it is definitely worth the extra pennies.







My top Croyde tips

Learn to Surf or Body-board
Croyde has some really great waves, whether you learn to surf or body board, grab a wetsuit and you can have hours of fun!

Sand-dunes
Croyde has some amazing sand dunes, pitch up a disposable BBQ on an evening and watch the sun set from the dunes.

Visit the town
Wherever you stay in Croyde the town is a skip and a hop away, they have some great cafes and pubs and the best ice cream!

Camp
They have some really great, clean, friendly campsites in Croyde. Whether you want to Glamp, caravan or do some traditional camping it has a bit of everything!

Delicious Coconut Dream


You will need...

For the base
200g Unsalted butter, softened
180g Soft light brown sugar
360g Plain flour

For the topping
4 Large eggs
350g Soft light brown sugar
¾ tsp Baking powder
250g Desiccated coconut
100g Chopped pecans or walnuts
1 ¾ tsp vanilla extract

I am always making cakes and although they are delicious, it usually takes quite a lot of time and preparation and after making some delicious tray bake Rocky Road I decided to embark on another tray bake recipe I have wanted to try. I have to say I wasn’t disappointed, they were moist and crumbly and full of flavour! Here’s how I made them…


Preheat oven to 175c (350F), Gas mark 4. Line the tin with grease proof paper
Cream together the butter and sugar for around 5 minutes until light and fluffy add the flour and mix well
Spread the base mixture into the bottom of the tin and spread evenly. Bake in the oven for 10 minutes
To make the topping, beat the eggs, baking powder, flour, brown sugar and salt and mix well. Stir in the coconut and nuts along with the vanilla extract
Pour the topping over the baked layer and pop back into the oven for 15 minutes, or until the topping has set. Leave to cool and slice accordingly. 
Serve and enjoy :-)

Easy Peasy Rocky Road

I love to make Rocky Road as it is so easy to make, yet so tasty! This recipe is a firm favourite with my family and friends, its a great tray bake recipe to be enjoyed with a cuppa :)

You will need

150g Butter

250g Cookies (whichever you prefer)

350g Dark chocolate ( trust me it works better with dark )

150g Marshmallows

4 Tbsp Golden syrup


Baking

. Melt the butter, chocolate and syrup together in a saucepan on a very low heat, making sure you do not burn the mixture (keep mixing)

. Bash the cookies whilst still inside the bag with a rolling pin

. Poor the cookies into the mixture and stir

. Add your marshmallows

. Put some grease-proof paper into your desired baking tin, I use this because it makes it way easier to get the Rocky Road out once it has set

. Leave in the fridge for at least two hours or over night if you can

. Remove from tin and slice accordingly

. Sprinkle with icing sugar, grab a cup of tea and serve

Holiday throwback

As the sun has decided to come back out again, I started to look back over some of the amazing places around the world I have had the opportunity to visit. Although they make me sad and miss travelling it gets me excited for what the next few years might hold. I don’t begrudge not holidaying very much the last few years as we have been saving up for what is going to be the best day of our lives, but I can’t wait for us to start travelling the world together <3

Destination check list

I am a massive fan of holidays and traveling. I am so lucky to have already visited some amazing places in the world, however, I am beginning to have serious withdrawals. So naturally, as us women do, I have started compiling a list of places I really want to visit in the next two years... recommendations welcome.

Florida
We have already booked our holiday to Florida next year for our honeymoon, I can’t wait to go back as it’s such an amazing place there is so much to see and do. Me and my husband to be (that sounds so weird) are already planning where we want to eat, the shopping and obviously which parks we want to visit first J

Morocco
I have never visited anywhere like Morocco, but I can imagine the culture and cities are beautiful. I love the idea of popping to the markets, trying new cuisines and relaxing all in the same place. I’m gradually getting bored of those holidays where you sit by a pool all day, so I think somewhere like this would be really interesting and fun!

The Big Apple
I’m pretty sure it’s every girls dream to go to New York City! I have always dreamed of visiting near Christmas, perhaps with the chance of a sprinkling of snow and some Christmas shopping, so I am really hoping to go over next Christmas! I might have to make a hint or two to Liam J

The South of France
Being just over the border it seems silly not want to visit the South of France, I have heard from so many people how beautiful and warm it is. Who wouldn’t want to wake up to warm pastries, drink wine & cheese of an evening and get a tan all at the same time!?

Thailand
I am so lucky that I have an Uncle that lives in Thailand, why have I not visited yet!? I definitely will be venturing over within the next two years. So many people go travelling there, I would be silly not to go and make the most of having my own personal tour guide.

I wonder in two years how many of these places I will have ticked off my list, or whether my list may have changed?
